The client requested a cake with a mermaid theme.

The cake stood 14 inches tall and was made with vanilla sponge, raspberry conserve and vanilla swiss meringue buttercream. The mermaid and rock were sculpted from italian modelling chocolate and all elements of the cake were edible. The cake would feed approx 25 people and cost £75.
